Today’s post comes to you a few days past the regularly scheduled program because it’s a special birthday post!! And look at this awesome cake my fiancé made for me. This is, by far, the best birthday cake I have ever had. I can eat as much as I want and don’t have to worry about getting a stomach ache. The best part is that I am getting plenty of vitamins and nutrients while still enjoying something sweet.
Watermelon, alone, is packed with amino acids, lycopene, vitamin C, vitamin A, vitamin B6, antioxidants and . also contains potassium. With strawberries you get folate, iron, potassium, calcium, phosphorus, vitamin C and A, magnesium, and selenium. Blueberries store a boat load of the things we need including vitamin A, beta carotene, zinc, sodium, manganese, folate, vitamin E, copper, potassium, vitamin K, vitamin B6, choline, iron, and vitamin C. Our good friend the grape provides us with folate, vitamin A, potassium, iron, and vitamin C. And, of course, all fruit has carbohydrates, which are needed to fuel the body, protein (contrary to popular belief), and fiber to keep things moving!
I ate the watermelon by itself, for optimal digestion. The rest will be a nice snack for later. Why, you ask?
Watermelon takes about 20 minutes to digest. The reason to eat it by itself is because food competes with each other in your stomach and intestines. This means that if you eat something that takes 20 minutes to digest while eating something that takes an hour to digest, for example, the food that is ready to leave your body at the 20 minute mark will begin to rot. This can cause indigestion and upset stomach. Thus, proper food combining is essential for optimal comfort, especially on a raw vegan diet.
With a treat this good, I have no problem pacing myself!
