Servings:
2
Ingredients:
2 yellow peaches
2 white peaches
1 coconut
1/2 cup almonds
8 dates
Tools:
1 hammer
1 Phillips screwdriver
Preparation:
Soak dates in room temperature water for 5-10 minutes to soften. Sanitize screwdriver. Find the three round spots on coconut and hammer screwdriver into two of them (make sure holes are about two screwdriver tips wide and cleared of coconut meat for easy pouring). Pour coconut water into glass. Place coconut in a sturdy bag and swing onto ground (concrete is best) to crack it open. Making sure the hard shell has been removed, take about 1/4 of the coconut meat and chop into small pieces (it’s OK if there is brown skin on the outside of the coconut, you just want the hard shell to be removed). Blend coconut meat with about 1/2 cup of the coconut water that you previously removed from the coconut. Chop dates. Add dates and almonds to coconut mixture. Blend until chunky or smooth (according to preference). Slice peaches. Add coconut mix to peaches as desired and enjoy!
